To “Drizzle,” we drain a newly fermented tank of Pinot Noir. The tank is put on a stand and the lower door is slightly opened. Wine from the grape skins is allowed to “drizzle” into a brand-new barrel, which results in a ripe, full-flavored wine.
The Drizzle is full bodied and rich with concentrated notes of ripe cherry, mixed berry jam and blackberries. Subtle hints of cardamom and cinnamon spices finish with a delicate touch of smoke.
