By opening up the canopy early in the season on select Nielson vineyard blocks, sunlight is allowed to penetrate the grape clusters to reduce any green characteristics often resultant in whole cluster wines. Whole clusters are hand sorted and fermented in one-ton open top fermenters. The fruit is stomped by foot to break up the berries while including the stems.
